15 Amazing Artichoke Recipes

If you’re anything like me, you love artichokes. These things aren’t the cheapest – I could get a bunch of kale, a bunch of spinach, and a bunch of collard greens all for the same price as one can of artichoke hearts… or just one artichoke out of the produce section. Still I find myself obsessed with this delicious, healthy vegetable.

Unfortunately, these are most commonly used in spinach artichoke dip. Don’t get me wrong, I love spinach artichoke dip, but it’s kind of amazing how we can take these two really healthy foods and turn them into such an unhealthy dip, and then keep that unhealthiness in so many recipes. So without further ado, I give you 15 artichoke recipes (and not all of them are spinach artichoke!)

Crispy Artichoke Hearts with Horseradish Aioli

Crispy Artichoke Hearts

Simple, delicious, healthier appetizer option than spinach artichoke dip. Did I mention simple? All the time is spent waiting for the oven and chilling.

Slow Cooker Spinach Artichoke Dip

For everyone who can’t get away from the spinach artichoke dip.. here you go. It’s delicious and made in a slow cooker so you can be lazy!

Spinach & Artichoke Wonderpot

Spinach & Artichoke Wonderpot

I once made this for myself and ended up eating it for four days. I didn’t hate it at any point. Unlike spinach artichoke dip, this isn’t smothered in cheese. It’s flavored by pasta starches and the mushrooms add an amazing flavor. The recipe only calls for 4oz of spinach but I added an entire bag of frozen spinach (about 10oz) and it really helped bulk it up.

Spinach Artichoke Mac and Cheese

The other night boyfriend and I were looking up something to eat. He wanted mac and cheese so I met him in the middle with this slightly healthier option. We both highly recommend adding chicken – but it’s still really good without.

One Pot Spaghetti Alla Puttanesca with Chickpeas & Artichoke Hearts

This is a lighter pasta option. Vegan and mixing some of my favorite flavors together in a filling, flavorful pasta.

Lemon Artichoke & Asparagus Pasta

An even lighter, slightly sweet pasta. Lemon, asparagus and parmesan  really compliment the artichokes. This is a nice light and easy 20 minute dinner.

15-Minute Mediteranean Pasta

I love Mediterranean food and flavors and this pasta doesn’t disappoint.

Lemon Artichoke Baked Salmon

Moving away from pasta, salmon is really delicious with the lightness and sweetness of the artichoke and lemon. I want to eat this all the time.

Chicken with Artichokes and Sun-Dried Tomatoes

This recipe pairs artichokes and sun dried tomatoes (an excellent pairing) with chicken and a pan sauce, all in under 30 minutes for a delicious, easy dinner.

Pesto, Artichoke, and Havarti Grilled Cheese

Class up your grilled cheese with pesto and artichokes, you won’t be disappointed.

Spinach Artichoke Pesto Pizza

This is a delicious lemon side dish. Perfect for vegetarians.

Chickpea Salad with Artichoke Hearts and Hearts of Palm

Chickpea Salad

This is another vegan option! If you cant tell, pairing artichokes and chickpeas together and adding pretty much anything else leads to an amazing meal.

Super Summer Detox SaladSuper Summer Detox Salad

Ignore the name of this because detoxes are unnecessary and silly. But I do make this salad all the time because it’s delicious. I like to change out the cherries for a few kalamata olives and add a little bit of feta cheese too.
