Guinness Pretzel Bites
   

Happy St. Patrick’s day! I did a lot of baking yesterday for the office. I made delicious delicious soda bread.

A recipe courtesy of my boyfriend’s mother so unfortunately I don’t feel comfortable sharing it with the internet. But just look at how delicious it looks!

What I will share with you all is this amazing guinness pretzel bites recipe.

Look at how delicious they look. I discovered these from Baked by Rachel and really wanted to bring them to work to share so I broke them up into bite sized pieces. And then I hoarded about a 3rd of the bites because they ended up being so good I didn’t want to commit to sharing.

Guinness Pretzel Bites

Yield: 40 bites depending on size

Guinness Pretzel Bites

Ingredients

  • 3/4 cup warm water - about 115-120 degrees - warm to the touch but not scalding
  • 2 1/4 tsp or 1 packet active dry yeast
  • 1 tbsp sugar
  • 4 - 4 1/2 cup all purpose flour
  • 2 tsp salt
  • 2 tbsp unsalted butter, melted
  • 3/4 cup Guinness
  • 1/3 cup baking soda
  • 8 cups water
  • 1 egg
  • Course sea salt

Instructions

  1. In a large measuring cup, lightly stir together water, yeast and sugar. Allow to rest for 5-10 minutes.
  2. Meanwhile, in a large bowl sift together 4 cups of flour and salt.
  3. Measure out Guinness and melt butter.
  4. When yeast has proofed (bubbled up, proves its active - if nothing happened, repeat step one with new yeast), slowly add to dry ingredients and mix, followed by Guinness and butter.
  5. Add additional flour as needed until dough is no longer sticky and is handleable.
  6. Shape dough into a smooth ball, transfer to a large greased bowl. Flip dough once to coat completely with oil.
  7. Cover and allow to rise in a warm location for one hour or until doubled in size.
  8. Preheat oven to 450 degrees.
  9. Prepare two baking sheets with parchment paper.
  10. Bring 8 cups of water to a boil with baking soda. In a small bowl, beat one egg with 1 tbsp of water.
  11. Divide dough into small balls - I made about 40.
  12. Carefully place pretzels in boiling water in batches of about 8 depending on your pan size, being careful not to overcrowd, for 30 seconds. Use a spatula to remove the pretzels from the water, placing back on parchment lined baking sheets.
  13. Brush each boiled pretzel well with egg wash and immediately sprinkle with coarse sea salt.
  14. Bake for 12-14 minutes until nice and golden
  15. These are best warm out of the oven but will also be delicious next day. Try tossing them back in the oven for 5 minutes to warm them up!
