About this time last year I came out with my Hard Apple Cider Cupcake recipe which is easily the most popular recipe on this site – especially when you combine those views with my Winter Woodchuck Cupcakes. You people clearly love hard cider – or you hate it and are trying to get rid of it.
Well, this year Angry Orchard came out with a seasonal cider called “Cinnful Apple” and man is this cider spicy. It’s good, but spicier than I would like – I like the apple in the forefront. So what better to do than bake a delicious spicy apple cookie with it? And this cider does make one delicious cookie.
Filled with a surprise caramel center and topped with a Cinnful Apple Glaze, these cookies are definitely a delicious treat. The Cinnful glaze really makes it though, so make sure you don’t skip it. Plus it’s just so simple, I don’t know why anyone would actually skip it.
Ingredients
- 1/4 cup + 3 tbps apple butter
- 2/3 cup Angry Orchard Cinnful Cider (or any other hard cider or even normal cider if you're under 21)
- 3 tbsp canola oil or applesauce
- 3/4 cup brown sugar
- 2 2/3 cups flour
- 3/4 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp cinnamon (if you don't use Cinnful Cider use 1 tsp cinnamon)
- 1 tsp apple pie spice
- 1/4 tsp powdered ginger
- 16 soft caramels
- 3 tbsp cider
- 1 cup powdered sugar
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350 degrees. Line baking sheet with baking parchment.
- In large bowl, stir together apple butter, apple cider, oil or applesauce, and brown sugar. Sift in dry ingredients and mix until just combined.
- Drop heaping tablespoon-sized portions of dough on prepared baking sheet. Press the caramel in the middle and cover with more dough. Flatten dough slightly.
- Bake for 8-10 minutes, or until golden. Transfer to cooling rack.
- Make the glaze by combining the cider, powdered sugar and cinnamon.
- When cookies are cool, dip them in the glaze and allow some time for the glaze to set.
