Chocolate Irish Cream Birthday Cake

One of my roommates turned 21 this week. So of course, I made a cake for her. I pretty much only had the ingredients to make a standard chocolate cake, but since she was 21 I had to toss some alcohol in there which meant a trip to the store. One of my other roommates tagged along and while in the cake decoration aisle we stood there with sugar pearls and classy candles, prepared to make the classiest 21st birthday cake ever…

birthdaycake3But then we decided that classy is way overrated and bought a bunch of dinosaur sprinkles and the most ridiculous, brightly colored candles you can buy. The cake itself is delicious. The Irish Cream adds a nice depth and the chocolate frosting is so delicious. It’s an incredibly rich cake so eating a whole big slice was almost impossible – the dinosaur sprinkles make it especially hard – but we all powered through because it was just so darn delicious!

Also, I honestly can’t look at it without laughing. It was such a nice looking chocolate cake before I tossed sprinkles all over it. I think the candles really pull it together don’t you?

Chocolate Irish Cream Birthday Cake

Ingredients

  • 2 cups sugar
  • 1 3/4 cup flour
  • 3/4 cup cocoa powder (I use Hersey’s dark)
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup irish cream
  • 1/2 cup oil
  • 2 tsp vanilla extract
  • 1 cup just brewed coffee
  • for the frosting
  • 1/2 cup (1 stick) butter or margarine
  • 2/3 cup Cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F and grease two 9 inch round pans
  2. In a large bowl sift together sugar, flour, cocoa powder, baking powder, baking soda and salt.
  3. Add the wet ingredients and stir until just combined. Then add the coffee and stir until combined. The batter will be really really thin
  4. Divide the batter between the two pans and bake for 30-35 minutes
  5. for the frosting melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
  6. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
