While you’re waiting for your delicious dinner rolls to rise, why not make and bake some delectable pepper double chocolate chip cookies. The recipe made over 40 large cookies and every single one of them was eaten. The cookie has a crunch but the inside is a perfect chewiness. It’s incredibly chocolate-y with just the right amount of peppermint. Really a perfect treat to top with some vanilla ice cream and finish off the holidays with!

Ingredients

  • 1 1/4 cups butter
  • 2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp peppermint extract
  • 2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chocolate chips

Instructions

  1. Preheat the oven to 350F
  2. Cream together the butter and sugar
  3. Beat in the eggs, vanilla and peppermint
  4. In another bowl, sift together the flour, cocoa, baking soda and salt
  5. Slowly add the dry ingredients to the wet, stirring until combined.
  6. Fold in the chocolate chips
  7. Scoop balls onto nonstick cookie trays and bake about 10 minutes
