Continuing on with the 21st birthday cupcakes, I made some delicious Rum and Coke cupcakes! While the roommates seemed to like the Crispin (because the hard apple cider cupcakes really are top 5), and the white wine cupcakes (which really were amazing) best, one of them has an infatuation with these. And I have to say, they are pretty good, and they actually have a kick to them – probably because I forgot to put coke in the frosting and used twice the amount of rum… but hey, it still works.

They’re moist, and light and full of that rummy flavor so really, perfect for a 21st birthday party. Who wants just the hint of alcohol when it can kick you in the face?

Yield: 22

Ingredients

  • 1 cup flour
  • 3/8 cups sugar
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp butter
  • 1/2 cup coke
  • 1/4 cup captain (or other spiced rum)
  • 1 egg
  • The frosting:
  • 1 stick (1/2 cup) butter
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 2 tbsp rum

Instructions

  1. Preheat the oven to 350F
  2. Cream together the butter and sugar, then add egg and mix well.
  3. Stir in the captain and coke (it will curdle)
  4. In another bowl, sift together the flour, baking powder, baking soda and salt, then add the wet mixture
  5. Stir until silky and fill the liners 3/4 full with batter
  6. Bake for about 10 minutes
  7. To make the frosting cream together the butter and vanilla and alternate adding powdered sugar and rum until desired consistency is reached
  8. Wait until cupcakes cool, then frost
