It may not be officially fall yet, but the weather is cooling down, school has begun and berries have gone up in price which means it’s time to celebrate fall. Despite the fact that I have 70% of Frankenstein left to read and a rather large amount of other homework, I decided it was time to begin the celebration with pumpkin, delicious delicious pumpkin. Pumpkin baked goods are my absolute favorite part of fall. And these were such a hit when I made them last year, I’ve decided to revisit the Pumpkin Chocolate Chip Brownie Bars and share the joy with all the new people in my life.

And these were such a hit when I made them last year, I've decided to revisit the Pumpkin Chocolate Chip Brownie Bars and share the joy with all the new people in my life.

I decided to make these for work in a celebration of my friend Caron’s birthday, which was last weekend. Because of this – they are vegan . But still 100% delicious. The apartment smells like fall, my roommates ate up the plate I put aside for them, and everyone is feeling the joy of autumn these bring. I mean really, look at these delicious things:

They are so moist and chocolatey. They also have a really good kick of spice to them. Honestly, I could eat the whole tray of them on my own in one sitting. I adore these.

Pumpkin Chocolate Chip Brownie Bars

Yield: 16

Ingredients

  • 2 cups flour
  • 3/4 tsp cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp cocoa powder
  • 1 tsp baking soda
  • 3/4 cup oil (or 1 cup butter)
  • 1/2 cup brown sugar
  • 3/4 cup white sugar
  • 1/4 cup apple sauce (or 1 egg)
  • 2 tsp vanilla
  • 1 cup pumpkin puree
  • 12 oz chocolate chips

Instructions

  1. Preheat oven to 350
  2. Sift together all the dry ingredients (minus chocolate chips)
  3. Cream the oil and sugar then add the apple sauce and vanilla and pumpkin
  4. Slowly add the dry ingredients and stir until smooth
  5. Fold in the chocolate chips
  6. Spread in a 9x13 pan (after spraying it with nonstick spray) and cook for 30-35 minutes

    I love these. I made them last October when I was pregnant, the night before I went to the hospital for an induction. I brought them in for the nurses and they loved them! I made them again a few weeks later when my friend had a baby at the same hospital and brought them in again. And of course I made them again this fall. The only thing i did differently is use applesauce instead of oil or butter and then used the egg instead of the applesauce. They came out super moist and super yummy!
