Chocolate Chip Banana Cookies – with the perfect hint of cinnamon
   

These look just like normal chocolate chip cookies don’t they? They are so much more than that. As I mentioned in my last banana cookie post, baking with bananas is a challenge. I actually ended up coming up with these chocolate chip banana cookies while I was working on that double chocolate banana recipe, because I just wasn’t sure they were going to come together and I wanted a back up. And I may like these a little more.

Chocolate Chip Banana Cookies

I love cinnamon. I love cinnamon and banana. I love cinnamon and chocolate. I love chocolate and banana. And I love all three together. Seriously though, the spice level in these are just perfect. I think the cinnamon balances out the sugar and makes these less cloyingly sweet. Plus like, they have bananas in them so they’re basically healthy*

Chocolate Chip Banana CookiesThey are actually delicious though. Their flavor is complex. They’re nice and chewy and moist. They taste like banana bread but they don’t feel like banana bread. Plus they’re super easy to make. All in one bowl – 10 minute bake and then let them rest.

Like a lot of baking with fruit recipes, these get better in time. As they sit around the banana flavor becomes more prominent. I highly recommend eating these next day rather than right out of the oven because they really do just get better and better

Yield: 16 cookies

Chocolate Chip Banana Cookies – with the perfect hint of cinnamon

Ingredients

  • 7 tbsp butter - softened
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1/4 cup banana - one small/medium banana, mashed
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 1/2 cup all purpose
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350F
  2. In a large bowl, cream together the butter and brown sugar, until nice and smooth. Stir in the vanilla and banana, then stir in the salt baking soda and cinnamon.
  3. Add the flour and stir until just combined. Then fold in the chocolate chips.
  4. Spoon rounded tablespoons of dough onto a cookie sheet and bake for 10 minutes (don't worry if they seem underbaked, that's what you want!). Remove from oven and allow them to cool on the baking sheet for 10 more minutes, then move to a wire cooling rack. These will be most delicious next day
