White Russian Cupcakes

After a particularly bad day, all I wanted to do was bake and what better to bake on a bad day than a cupcake filled with alcohol? And baked perfection supplied me with the perfect recipe. The best part is they were quick and easy to make but still turned out deliciously.

 Seriously, these are delicious. They taste just like a White Russian. The cupcake is cakey and moist and the frosting is just yummy. My house was filled with band members all week and they just ate them up, calling them “better than a White Russian”

White Russian Cupcakes

Ingredients

  • 1 1/4 cups all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 6 tablespoons butter, softened
  • 1 large egg and 1 egg white
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/8 cup Vodka
  • 1/4 cup Kahlua, divided
  • For the frosting:
  • 1 stick (1/2 cup) of butter, softened
  • 2 - 2.5 cups powdered sugar
  • pinch of salt
  • 3 - 4 tablespoons Kahlua

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line a cupcake pan with paper liners.
  2. In a medium bowl, mix together the flour, baking powder, and salt. Set aside.
  3. In a large bowl or in a stand mixer, beat together the sugar and butter until combined. Add egg and egg white, one at a time. Then add the vanilla, Vodka, and 1/8 cup of Kahlua.
  4. Gradually add the flour mixture in three additions, alternating with the milk in two additions, ending with the flour mixture.
  5. Bake 17 -20 minutes, or until a toothpick inserted in the middle of a cupcakes comes out clean. While the cupcakes are still warm, brush the tops with the remaining 1/8 cup Kahlua. Remove from pan and cool completely on a wire rack before frosting.
  6. In a new bowl beat butter until creamy. Add salt. Add powdered sugar 1 cup at a time, beating until combined. Add Kahlua 1 tablespoon at a time until you reach desired frosting consistency.

      Divided means you’re not going to use it all in one place. So 1/8 cup goes in the batter and the other 1/8 cup goes on top for soaking!

      I used Smirnoff. So you can go cheap just don’t go too cheap, you have to consume it after all.

    I made these and they were an absolute hit! I little more dense of a cake than I’m used to but it didn’t matter to me. I did add a bit of cinnamon to the batter and it really made them delicious.

    Do these cupcakes have an effect of actual alcohol? I guess there is not that much in there compared to the amount of cupcakes. Can you feel it at all?

      No, most of the alcohol in the actual cupcake bakes off. You could try to add more alcohol to the frosting for an extra kick, but not enough to actually get to drunk or even tipsy.

      I haven’t tried, but you should be able to. You may have to double the recipe to get two layers. Report back if you try it!

    I made it as a cake and it was amazing. I didn’t double it, but I will when I make it for the birthday party this weekend and make it as a layered cake. Very fun delicious recipe!

      I don’t use cake mix so I can’t guide you on how to properly substitute, but I know of cakes like this. So maybe just change the chocolate to white and baileys and everything to vodka/kahlua.

    I doubled the recipe and forgot to double the egg, would you put the batter back in a bowl and mix in a egg or just leave as is and hope one egg is enough?
