Let me start this out by saying, this recipe sounds weird. And like it wouldn’t be very good. But banana bread is good. S’mores are pretty delicious. Putting banana in a S’more is also pretty good. So this had to at least be decently good. I didn’t expect this to completely change the way I think about banana bread. Or to be one of the most delicious things I’ve ever eaten. So I was pleasantly surprised when it was really damn good. Like, change the way I think about banana bread good.

S’more Banana BreadThe marshmallows really add a lushness to the bread and the hershey’s chocolate is velvety (something I never thought I’d say about hershey’s chocolate) and the graham cracker adds different texture and a note of honey which is delightful. This is the second loaf I’ve made in the last week. The first one was devoured within and hour at work and this one is quickly being eaten by my roommate and me.

S’more Banana Bread


  • 6 tablespoons unsalted softened butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 large ripe bananas
  • 1/4 cup sour cream (or milk)
  • 1 cup flour (I used wheat)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup Mini Marshmallows
  • 3 full sheets graham cracker
  • 3 full Hershey Bars


  1. Preheat oven to 350 degrees F. and spray a 9x3x5 inch loaf pan generously with non stick cooking spray.
  2. Place butter into a large mixing bowl and stir in sugar until well combined. Add egg, bananas and sour cream mixing until well combined. Stir in flour, baking soda, baking powder, salt and marshmallow bits until combined. Pour half of the batter into prepared loaf pan. Layer with graham crackers then Hershey Bars. Top with remaining banana bread batter spreading evenly then bake for 50-55 minutes or until baked through (mine took about 35 minutes). Let cool for 30 minutes then remove from pan and let cool completely. Cut into slices and serve! Garnish top of bread with additional marshmallow bits if desired.
